Spanish-style Chicken Rice

Without a doubt, when we refer to the “Spanish style”, we are talking about recipes that take the rural or coastal touch of certain regions of Spain. And generally drinks such as wine are used in their preparations, as well as certain types of vegetables and spices.
On the other hand, chicken is an extremely nutritious food, rich in vitamins A and B, essential minerals such as iron, zinc and countless proteins. Due to its flavor, texture and easy preparation it is a very popular ingredient.
Regarding white rice, we know that it is a cereal that has a high amount of carbohydrates. And it also contains:

So, it comes as no surprise to many people to prepare delicious dishes based on these two ingredients. Also, we can give it a personal touch, that is, using some of our favorite ingredients to make this dish.
Spanish-style chicken rice
However, nowadays, there are thousands of recipes that take the touch or essence of certain countries famous for their gastronomy, and Spain does not escape this one. That way we’ll be able to rotate 180 degrees, not only to this plate, but to whatever we want. Learn how to do it.
Remember that you can also use shrimp and oysters to give the dish a more coastal touch. This is purely optional, you will decide whether or not to include them in the preparation.
Ingredients
- 1 cup of white rice (220 g)
- 2 chicken legs (450 g)
- 1 1/2 cup of chicken broth (300 ml)
- 1/2 glass of white wine (100 ml)
- 1 carrot cut into slices
- 1/2 onion
- 3 crushed garlic cloves
- 3 tablespoons of olive oil (45 ml)
- 2 tablespoons of turmeric (30 g)
- 2 tablespoons of salt (30 g)
- 1 spoon of pepper (15 g)
- 2 bay leaves
- 1 tablet of chicken stock concentrate (optional)
Method of preparation

- First, take a large pan and saute with the spoons of oil, onion and garlic cloves previously ground. Stir continuously.
- Then add the chicken legs and cook them until they are browned.
- Also, remember that carrots should be cut into slices no more than 2 centimeters thick, so they can be cooked properly.
- Afterwards, pour the chicken stock together with the sliced carrots, turmeric, bay leaves, salt and pepper. Mix very well so that the ingredients are integrated.
- On the other hand, wait at least 5 minutes and then add the cup of wine. Allow the alcohol to evaporate a little and then cover so that it cooks over medium heat. Stir every 5 minutes.
- Also, after about 20 or 25 minutes, see if the chicken is tender. Once ready, remove the thighs and add the rice so that it absorbs the chicken stock.
- If you like, you can add a tablet of concentrated chicken broth. Cover for 5 minutes, then return the chicken legs to the pan. Turn off the heat and let it stand for a while.
- Finally, serve in your favorite dish and add some bay leaves or red pepper strips to decorate.
Additional Advice
In such a case, you will need to avoid oil and replace some ingredients with:
- Brown rice
- Low fat chicken broth
- Chicken breast
