The main thing is not to overdo the cooking, so that they are not hard or rubbery. If you want them to soften quickly, it’s a good idea to submerge them in milk two hours before cooking. Lastly, and most importantly, do not ingest those that are more than three months old in the freezer.

When cooking the squid, we can do it in two ways. That is, we can cook it quickly (for example on the grill) or slow on the fire. It is important to cook for the recommended time to make them soft.

Braised squid with potato garnish

Breaded and fried

Ingredients

  • Water.
  • Blonde (1 sheet).
  • Potatoes (1 kg).
  • Squid (1 kg).
  • Garlic (3 cloves, 40 g).
  • Salt, pepper (to taste).
  • Onion (1 piece, 50 g)
  • Red pepper (1 piece, 50 g)
  • Skinless tomato (1 piece, 50 g)
  • White wine (1 glass, 200 mL)
  • Green peppers (1 piece, 50 g).
  • Oregano (1 scoop)
  • Olive oil (3 scoops, 50 mL)
  • Spicy paprika (1 scoop, 5 mL).

Method of preparation

  1. Wash, clean and chop the squid.
  2. Pour garlic and onion in a skillet with oil to sauté. The garlic must be crushed and the onion chopped in julienne.
  3. When the garlic starts to brown, add the peppers cut into small pieces. Cook until they soften a little.
  4. Chop tomatoes into cubes and add to skillet. When these start to fall apart, incorporate the squid, which should be simmered in the contents.
  5. Season with the chili powder, salt and pepper. Also add the bay leaf to bring its characteristic aroma.
  6. Add the wine glass and water (enough so that the squid is completely covered). You’ll know they’re ready when they’re smooth when chewing.
  7. A few coriander leaves spread over the top will bring a tasty taste. Serve with baked, fried or steamed potatoes.

Stuffed and braised squid

Squid Stuffed

Ingredients

  • 1 glass of white wine (200 mL)
  • 10 small squid (500 g).
  • 1 can of peas (200 g).
  • 2 ripe tomatoes (80 g).
  • 10 crayfish (300 g)
  • 1 green pepper (60 g).
  • One red pepper (60 g)
  • 1 cup of rice (200 g).
  • 1 large onion (80 g).
  • Olive oil.
  • 4 eggs (100 g)
  • Salt (to taste).
  • Toothpicks.

Method of preparation

  1. Carefully clean the squid, removing the skin and cutting the tentacles into small pieces. Do the same with the crayfish and reserve.
  2. Chop the vegetables into small cubes and place in a pan with olive oil. The ideal is to add the vegetables in order: first the onion, then the peppers and finally the tomato.
  3. Add a pinch of salt and a pinch of sugar to eliminate the acidity. The idea is to cook on low heat for about 30 minutes.
  4. After half an hour, add the tentacles and cook for 10 minutes. Place the crawfish and let it cook for five minutes. When ready, remove from heat and allow to cool.
  5. Pick up the squid and fill it with the stew (reserve a portion for later). It should be done little by little and gently, so that they are perfect. Then skewer with a toothpick so that the filling does not come out, and brown in the pan with oil.
  6. When they are golden, place them in a pan and cover with wine and water. Cook for 25 minutes, until the squid is tender.
  7. Add the reserved stew, peas and rice. Add the salt and wait for the rice to cook.
  8. Remove from heat and serve to taste.

Braised squid is a very complete dish, but it can be accompanied by salads or fries if you wish.
